The ingredients needed to make Gypsy Soup:
  1. Get 1 splash of olive oil
  2. Take 2 roughly chopped onions
  3. Prepare 4 stick of celery, chopped
  4. Prepare 2 cup sweet potato/kumara, cubed

  6. Take 5 cup water
  7. Take 2 tsp paprika

  12. Get 1 dash cayenne pepper
  13. Take 1 capscicum, chopped

  17. Make ready 1 tsp salt
  18. Get 3 tbsp tamari/ soy sauce

To make this soup, first chop up a sweet potato, onion, three celery sticks and two cloves of garlic. I am making Gypsy Soup which is made of many unusual things, including weeds."   1. Heat the olive oil in a large soup pot and add onion and celery. Sweat for five - ten minutes until starts to glisten
  2. Add the sweet potato and garlic and sweat for another five or so minutes
  3. Add the water amd all spices except for the salt and soy sauce
  4. Simmer covered for 15 minutes
  5. Add the chickpeas, tomatoes and all other vegetables. Simmer for a further 10 -15 minutes
  6. Add the salt and soy sauce (tamari is a gluten free option if you need it).
  7. Stir through, check your seasonings and serve.
  8. Note : you can use any vegetables really. As long as you have a root vegetable and something green for colour. I've used potatoes and brocolli instead of sweet potato and peas in the past. delicious! My partner likes his with a dollop of sour cream which is pretty yummy too :)
